Simply Pumpkin Pancakes

Ingredients:

1 ¼ cups all-purpose flour

¼ cup white sugar

2 teaspoons baking powder

½ teaspoon ground cinnamon (or more to taste)

¼ teaspoon ground nutmeg

¼ teaspoon ground ginger

½ teaspoon salt

1 teaspoon vanilla

1 cup milk

½ can pumpkin puree

1 egg, beaten

1 tablespoon vegetable oil

Chopped pecans (optional)

Directions:

  1. Sift first seven ingredients together in a large bowl.
  2. Whisk milk, pumpkin, egg, vanilla and oil together in a bowl. Pour milk mixture into flour mixture and stir until just moistened. Batter will be slightly lumpy.
  3. Heat a lightly oiled griddle over medium heat. Use a large spoon to drop batter onto the griddle and cook until bubbles form and the edges are dry, one to three minutes. Flip and cook until browned on the other side, about one minute more. Repeat with remaining batter.
  4. Serve with warm maple syrup and sprinkle lightly with pecans.
